In a world where corruption is all around does it pay to be honest?

Is honesty the best policy?
Remember our mother always saying it always pays to be honest.

Your invited over for dinner and there having pot roast." yummy "
but the cook didn't do such a great job of it.
but you continue to get through it anyway, not wanting to hurt her feelings. thank god there was the family dog near the table.

The cook mentions oh you must of loved the roast would you like some more?
To your reply I'm pretty full, thank you anyway.

Now if we were honest, we would of been truthful and just said your dinner was disgusting!

Now the people were very nice only there cooking was terrible.

Two weeks later you break a leg in an accident. Your laid up for a while. You pretty much cannot get around. Your friend that had you over for dinner a while back, brings you over a plate of dinner. Guess what it's her famous pot roast!

So we ask ourselves is honesty the best policy?

Now we want to be honest and in our hearts, we want to trust people and confide in them about personal affairs in our lives. Do we dare?

I have a close friend of mine we will call her Davina.
Davina decided to take a job 300 miles away from her family adventually relocating when the establishment got on its feet.

She was sacrificing quite a bit to get ahead she knew she didn't want to be away from her family for long periods of time and they really needed the money in these hard times.
At night when the store was closed she blew up her air mattress and pluged in her heating blanket and prepared for the cold night.
Davina wanted to save every dollar she had so she decided to go this rout enstead of paying for motels. So she decided to sleep in the store. Which was alright with her employer.

So not only did they have a supervisor they now had store security.
Davina would go the extra mile and work extra hours into the night and also extra early hours also.

So after working about a month she noticed things turning for the worse.
Her employer really started changing his aditude towards her.

Well to make the long story short, Davina ended up quitting tired of the abuse. Not to mention her employer and Davina made an oral agreement that her pay was to be paid under the table. Davina confided in her employer personal information that might incriminate her and her family. Her employer had plenty to hide also especially when he didn't want to declare his taxes.

So really is it better to be honest ? in this case maybe not.

When it all comes down to reality in the real world, "honesty is not always the best policy"

You cannot trust anyone or can you?

life a precious gift...

We wake every morning with a start of a new day. But do we really live life to the fullest savoring every moment of our precious life?
I think it's in ourselves to take advantage of our gift of life. I've been very sick the past month thinking I had a very bad case of a bladder infection or worst yet kidney. Well Monday morning I had to rush to the hospital emergency room. Come to find out my prognosis was fibroids in my uterus. And if untreated leads to cancer. I was never one to get annual physicals. If I did go see a doctor,it was only for the flu. I figured what was the point? My over all health was never an issue. I now know when women get to a certain age, regular physicals are very important. A close friend of mine attended a funeral not long ago for a close female friend of his. It turned out to be cervical cancer,they detected it a little too late and she died. She was very young also. It's very sad when we women cannot be bothered to take some personal time for our well being. Why do we have to wait till were dying? Putting things off tomorrow, tomorrow, well tomorrow maybe too late. We need to stop being so caught up in our busy lives and if not think for ourselves, think about our children and family who will be devastated if we were gone. Life
a precious gift from god. We need to
show that we will cherish it...
Because we only get one chance.

There once was a woman who lived her life for her children and husband.

One day she found herself tired and old and she wondered where did her life go?

She never really accomplished anything for herself. All her dreams diminished over night...

As she stood in her kitchen window, washing up the breakfast dishes, she wondered...

Could she had led her life in another direction? maybe chose a different road?

What could of happened if she didn't meet her husband that night?

And what of became of her if she would of chose to finished her education and went all the way?

Maybe she would of became that great big writer and traveled and seen the world....

As the woman sighed and came back to reality with sadness and regret she realized at least I'm here and I can instill to her children" make your dreams come true", because you can never go back to what of, could of, and should of......

Rainy days...

I am not like most people, "I adore rainy days!"




And yes I should live in Seattle or Oregon or Ireland where it constantly rains.
But unfortunately I don't.

Here I am curling up on my favorite favorite green comfy chair with my beautiful crocheted shawl I just finished, and it's so warm. And I have a hot cup of cocoa.

I'm looking outside and it's raining and it's just beautiful. It's funny just last week it was in the 100's, maybe that's the reason I'm loving the weather.

No I know I have always loved the cooler weather. And I don't understand when people say they get the blues when the weather is gloomy. "go figure"

Now yes there is the bad side to the weather conditions in the rain. Like the morons that don't know how to drive in it. It's like playing bumper cars especially trying to take your kids to school in the morning.

But then again those morons cannot drive to save there life in the normal weather.

It was so nice the other day my husband noticed that we have a new visitor in our back yard it's a beautiful toad. We had one two years ago it grew quite large, and then when summer time came it found a new home else where. I just wonder if this new frog is it's off spring.

Well how nice is this, can you picture this scene? Raining outside and hearing a frog making it's beautiful sounds in my backyard.



Now I recall the last toad we had I was going to capture it and keep it as a pet. But after doing a little research I found out it's chances for survival were not that good so it was better to keep it in it's natural habitat. I discovered it had plenty of food in my back yard to do well.

And I also found out that they hibernate during the winter by burring themselves and then come out in the summer again.

Cappuccino-Fudge Cheesecake

Just a few days after baking this cheesecake my oven caught on fire. I was preheating it to bake some bread rolls. When the oven beeped to let me know it had reached its temperature I walked on over to throw my dough in. That's when my heart stopped beating. Beyond the small glass window in the door a huge orange flame leaped and jumped inside. My first thought was "Oh no, my bread rolls!". I was actually upset that I wasn't going to get to bake them. Then I thought, "Oh no, my oven!". Then finally some logic entered my brain and I thought, "Oh no, my house!" then, "Oh no, my safety!". Luckily by the time I found my phone to call someone the flame had extinguished itself. I'm just so grateful that our oven has a glass window and I realized there was a fire before opening the door and letting in a big gulp of oxygen before I bent over to stick my pan in.

The fire probably started because there was grease on the bottom below the electric heating element. I don't think I'll ever preheat my oven again without checking to make sure it's spotless inside. And making sure I've got a fire extinguisher nearby. At least the fire didn't start while my cheesecake was baking. That would have been AWFUL.



Recipe Rundown
Taste: Like a sweet, sweet, rich chocolate cappuccino. The coffee flavor becomes more pronounced as it sits in the fridge.
Texture: The crust is crunchy, the ganache layer is thick and fudgey, and the cheesecake is rich and smooth.
Ease: I simplified this recipe quite a bit from its original version because I felt that even simplified the cheesecake is beyond divine and indulgent. I've found Medaglia d'oro espresso powder at Whole Foods and King Arthur espresso powder at Sur la Table.
Appearance: Pretty dang impressive. This would look marvelous on any dessert table for any occasion (except maybe a child's birthday party).
Pros: Scrumptious, gourmet dessert that's easy enough to make.
Cons: Not exactly healthy but definitely great for a special treat.
Would I make this again? Yes.

Cappuccino-Fudge Cheesecake
Serves 12
Adapted from Bon Appetit Cookbook
Crust:
1 (9-ounce) box chocolate wafer cookies
1 stick (8 tablespoons, 1/2 cup) unsalted butter, melted
Ganache:
1 1/2 cups whipping cream
1 1/4 pounds bittersweet or semisweet chocolate, chopped
1/4 cup Kahlua, or other coffee-flavored liqueur
Filling:
4 (8-ounce) packages cream cheese, at room temperature
1 1/3 cups sugar
2 tablespoons all-purpose flour
3 tablespoons instant espresso powder
1 tablespoons vanilla extract
2 teaspoons light molasses
4 large eggs
For the crust:
Preheat oven to 350 degrees F. Spray a 9-inch springform pan with non-stick spray.

In a food processor grind the chocolate wafer cookies until they are fine crumbs. With the motor running, add melted butter and pulse until combined and mixture resembles wet sand. Press mixture evenly into the bottom and up the sides of prepared pan using the bottom of a measuring cup or glass. Bake for 7 minutes.

For the ganache:
Bring whipping cream to a simmer in a large saucepan. Remove from heat and add chopped chocolate and Kahlua. Whisk until chocolate melts and ganache is thick and smooth. Pour 2 cups of ganache over bottom of prepared crust. Freeze crust until ganache is firm, about 30 minutes. Reserve remaining ganache in an airtight container in the fridge.

For the filling:
Using an electric mixer, beat cream cheese and sugar until well combined. Beat in flour, espresso powder, vanilla, and molasses. Beat in eggs, one at a time, until combined.

Pour filling over cold ganache in crust. Place cheesecake on a rimmed baking sheet. Bake at 350 degrees F until top is brown, puffed, and cracked at edges, and center 2 inches move only slightly when pan is shaken gently, about 1 hour. Transfer cheesecake to cooling rack until completely cooled, about 3 hours. Chill in fridge overnight.

When ready to serve, carefully release cheesecake from springform pan onto a platter or cake stand. Remove remaining ganache from fridge and beat with an electric mixer until lightened in color and pliable, about 3 minutes. Spoon whipped ganache into a pastry bag fitted with a large star tip. Pipe ganache in star dollops around the edge of the cheesecake.

Cheesecake will keep in fridge for up to 4 days.

Fall is here, and I love it!

Well it's my favorite time of the year.

Fall is almost here. You walk into the stores and notice all the costumes and treats. All those scary things, don't you just love it!

This has to be my favorite holiday "Halloween"...
I can't wait to get dressed up this year and take the kiddies out trick or treating. No matter if your young or old this is the time you can let your creative side come out and play.

I know I will! It's time to go out and buy baskets of green apples and start dipping them in that caramel that we love so much.

And let's not forget all those green leaves turning beautiful orange, red, and yellow.

From September or October? As summer turns to fall, foliage emerges and trees transform hills into a patchwork of colors.

Crisp fall days are perfect for leaf-peeping.

"I love fall" And then the days start to get a slight chill in the air, you know the seasons are a changing. I wish I lived in New York I hear they have the perfect weather this time of year.

A Fall Trip To New England.....

fall is the season for true nature lovers.

hiking along back roads, in small towns and on mountains is a splendid way to see glorious, color-changing leaves. You might get lost, but you’ll enjoy doing so.

A trip to:

New Hampshire, Vermont, Maine and other New England states are well known for their gorgeous trees. Fall is the time when easygoing greens make way for vibrant shades of orange, red, yellow, brown and even purple. This particular photo was taken in Vermont on a back road near Woodstock. The house may be crumbling, but the trees’ magnificent foliage more than makes up for it. If you’re lucky enough to visit New England in the fall, don’t rely on sight alone. Take in the crisp air, rustling leaves and sweet smell of nature.







And then we have those little traditions that my family does every year we make a trip out to the "Corn mazes"
What fun we have getting lost in the mazes at night with our flash lights, telling spooky stories, taking hay stack rides, oh and don't forget the hot coa-coa with marshmallows!










And then my most favorite things about this time of the season is all the never ending wonderful scary movies....
And no matter what time of the year it is, I watch them anyway.
But when it's October, I kind of get that warm feeling inside and it just seems a little bit more special.

Why can we all be fiends?

I have a seven year old daughter, and as I was picking her from school yesterday she came skipping about like little girls do holding onto her friend's hand.

It was so loving and cute. And it got me to thinking, what would the world be like if we were all like children? First of all I think we would all be having more friendship, and not take life too serious.

I think the majority of us get so absorbed in our lives working the 9 to 5 on a daily basis and never really having the time to stop and smell the roses and look for the little bit of beauty that surrounds us.

It's sad also that were so judgmental when it comes to people, do we really give everyone a chance for friendship? Do we judge people by appearances only? What they do for a living? What kind of car they drive, do they have the right color of skin? Do they come from the right side of town? Are they the right religion?

All these factors do they really matter? Are we too judgmental?
I think children should be a great example, they don't take much notice when picking friends. They will be at a park and pretty much ask any child, do you wanna play? Would you be my friend? Do you want to be in my club? Do you want to go to my birthday party?

Wow wouldn't it be wonderful if we all were so bold?
I know in reality, we all can't walk down the street holding onto our friends hands, but think about this: next time your at the public library, or on the subway, or at the bank, or just visiting your local park, and you see a stranger, don't hesitate say hello ask how their day is, give them a compliment.

After a brief conversation, you never know, be so bold and go for it! ask: "would you like to be my friend"? That person may surprise you. And you never know that person may be craving a person to just grab out and make that first move!

Believe me, karma is a great thing, by you throwing some real love into the world, it will all come back to you threefold.
Come on everyone let's put a smile on this busy, hectic, not so nice world we live in.
